Brand new never fired. Are their any real benefits of polishing it out with bore paste or just clean out factory gunk and shoot it?

Clean the factory gunk out and go shooting.  Copper bullets really help clean out anything left over and polish them up within 20-30 shots.

JB bore paste, Flitz, these work well for some extra clean up, but not really needed.

Agreed Jonathan, I like "JB Bore Cleaner (paste)", have used it for at least 40 years when needed.
