Short on game meat I made some whole meat beef jerky today.

5 lbs. in the oven for two hours, then onto the cooling rack

and finally to the plate

I make jerky year round.   I'm always trying new recipes and this particular one came right off the store shelf.  It's from Cabela's Jerky Making kit which includes the cure and flavor.  And yes...this particular batch, PRIME RIB flavor, tastes much better than it looks in the photo Very Happy
The key is buying VERY lean beef and having it all cut to a consistent thickness.   Your local store butcher can do this for you.  I like my finished jerky a little on the thick side, and found you get a lot of control with thick-cut strips by drying at 200 degrees.
